Simple Caulioats

Cauliflower is getting a lot of attention lately - and for good reason! Cauliflower is filling, versatile, easily accessible, and relatively cheap. I love the challenge of trying to be more creative with vegetables. The more we can learn to adjust our perceptions of foods that traditionally have a bad rap (beets, cauliflower, kale, etc.), the broader our horizons become to enjoy recipes we normally would pass over. Plus, we begin to feed our bodies a more diverse variety of nutrients! For the month of July, I thought we all could jump on the cauliflower bandwagon while I share some of our most favorite cauliflower-centric recipes.


1 C. almond milk

1 tsp. vanilla extract

2 C. riced cauliflower (I use one bag of Green Giant frozen riced cauliflower)

3 eggs*


  1. In a small saucepan, add milk and vanilla extract. Bring to a simmer over low heat.

  2. Once simmering, add riced cauliflower and cook on low heat for 2-3 minutes.

  3. Add eggs and stir well. Let cook for 2-3 more minutes, stirring regularly.

  4. Mix in additives! We like to add a mashed banana, a couple generous scoops of all-natural PB or almond butter, and frozen fruit if we have any on hand.

  5. Top with additional fruit, another dollop of nut butter, chia seeds, nuts, etc.

* If vegan, you can skip the eggs or sub them out for plant-based protein powder to help keep you full longer :)
