Easy Morning Casserole

gluten free. dairy free.


I know some people can eat breakfast for every meal, but honestly I get sick of breakfast really easily. There rarely seems to be enough variety in breakfast options - eggs can only be manipulated so many ways. I’ve been trying to find new recipes to get myself excited about breakfast again and this breakfast casserole is a new favorite! Packed with protein and A LOT of veggies, its not only delicious but it’s also a healthy choice to start your day.

Ingredients:

  • 1 carton of egg whites

  • 1 tube of turkey sausage or ground turkey (we use jennie-o)

  • 1/2 diced sweet potato

  • 1/4 head of cauliflower (~2 cups florets)

  • 1 pepper, diced

  • 1 small onion, diced

  • 1 roma tomato, diced

  • 2 Tbs italian seasoning

  • 1 tsp red pepper flakes (optional)

  • salt & pepper to taste

Directions:

  1. Preheat oven to 350.

  2. Heat 1 Tablespoon of olive oil or coconut oil in a sauté pan. Add turkey sausage cook through, breaking apart to make it small crumbles. Once cooked, place in a 9x13 baking dish.

  3. Add all vegetables, except tomatoes, and seasonings to sauté pan. If needed, add more oil. Cook until softened and browned. Remove from heat and place in baking dish with sausage, mix.

  4. Add egg whites to baking dish until sausage and veggies are covered. Bake in oven for about 30 minutes or until casserole is cooked through and “set” in the center.

  5. Top with nutritional yeast, hot sauce, or avocado!
